“Everything” Avocado on Sweet Potato Toasts – Vegan, Gluten-Free & Nut-Free

 

I have been seeing these sweet potato toast recipe on Instagram & Pinterest, and have been itching to give them a go. I have also been craving “everything bagel” flavour, and figured I would mash these two together and see what comes of it. We call it the “Everything” Avocado on Sweet Potato Toast Recipe (baked in the oven of course).  Happy to announce that it’s a win. Considering how fast my squad devoured them, I will be whipping up another batch this coming weekend.  This is a quick “How to make sweet potato toast recipe in the oven.  Although these are super-duper easy to put together, slicing the sweet potato toast will definitely require an ultra-sharp, large knife. One day I am going to get my act together and create a post about how important and helpful it is to keep your knives sharp. When I go to friend’s homes and (surprise, surprise) strong arm my way into the kitchen, I am always disenchanted by the drawers stuffed full of dull and useless knives. I am such a crazy person, that when I am bringing a dish that requires the use of a knife before serving, I actually bring my own. Yup. Facts. So moral of the story… this recipe is perfectly easy, assuming you have useful tools to cut into the sweet potatoes.

"Everything" Avocado on Sweet Potato Toasts - Vegan, Gluten-Free & Nut-Free

An unexpected combination makes for a rich and satisfying breakfast or even late-night snack!

Ingredients
  

Sweet Potatoes

  • 1 large sweet potato
  • 1/2 tsp olive oil
  • 3 medium avocados
  • 1 tbsp "Everything Bagel" Seasonings

"Everything Bagel" Seasonings

  • 2 tbsp sesame seeds
  • 2 tbsp poppy seeds
  • 1 tbsp garlic powder
  • 1 tbsp dried minced onion
  • 1 1/2 tsp sea salt
  • 1/4 tsp chili flakes - optional, if you like a bit of spice!

Instructions
 

Sweet Potatoes

  • Preheat oven 400°F and line a baking sheet with parchment.
  • Peel sweet potatoes and cut into 1/4 inch slices. Transfer to prepared baking sheet and drizzle with olive oil, flip and repeat on other side (I also sprinkled with a pinch of sea salt).
  • Bake for 10 minutes and then flip sweet potatoes and bake for another 5-7 minutes.
  • Remove from oven and allow to cool slightly.
  • In a bowl, mash avocados and mix in fresh lemon juice and seasoning.
  • Top sweet potato "toasts" with avocado mix and desired amount of "Everything Bagel" seasoning.

"Everything Bagel" Seasoning

  • Mix all ingredients together and store in an airtight container.
