Vegan Blondies – Funfetti White Bean

 

Vegan blondies made with white beans and done funfetti style?! This might be the most clever and FUN way to use beans. Move over black bean brownies, there’s a new dessert in town!

Not only are these vegan blondies totally adorable and delicious, they are also protein dense due to the addition of white beans.

As a person who isn’t crazy about desserts (I know, I know), I find myself more attracted to less sweet treats like banana bread, muffins and energy balls. The extra great thing about funfetti vegan blondies is that on their own they’re not overly sweet.

However, once the icing and additional sprinkles are added to these vegan blondies, they most certainly take on more of a nostalgic birthday cake taste and sweetness. Whether you add the icing competent is totally up to you!

Vegan Blondies – Funfetti White Bean

  • White Beans – I soak and cook my own beans. This allows me to control tenderness and saltiness. Canned white beans work totally great here too, just be sure they are not salted and you drain and rinse them super well. Navy beans are my preferred style for this vegan blondies recipe, as their outer layer isn’t too thick and blends up quite well.
  • Butter – Earth Balance and Melt are the two brands I would suggest for these bean blondies. They both give these vegan blondies that buttery cake-y flavour. I have tried this recipe using coconut oil and it wasn’t nearly as good… at all.
  • Sugar Coconut sugar is always my go to. I find it to be similar to using a blend of traditional white and brown sugar. If you don’t have coconut sugar, white sugar would work well enough here.
  • Flour – If you can do gluten for your vegan blondies, go ahead and use regular flour for this recipe. If you are like me and gluten-free is your only option, you will want to opt for a 1-to-1 gluten free flour. Bob’s Red Mill and Bulk Barn brand are always my easy go-to options. I have tried the Robin Hood gluten-free flour with this and it completely altered it, and not for the better. Eeek!
  • Sprinkles – Unfortunately, so many sprinkles are not vegan because they contain bugs and/or beeswax. Uhm, no thanks to bugs. Thankfully, there are plenty of brands catching up to the demand for vegan options and they have become much easier to source. Hooray! Bean Cake Vegan Blondies

Funfetti Bean Cake Blondies - Vegan, Gluten-Free and Nut-Free

White bean blondies. Sweet, buttery, loaded with sprinkles and topped with classic vanilla icing. Everyone will be shocked they're made with white beans!

Ingredients
  

Bean Cake Blondies

  • 2 tbsp ground flax
  • 6 tbsp water
  • 1 1/2 cups cooked white beans - I used navy beans
  • 1/4 cup melted butter - I used Earth Balance
  • 3/4 cup coconut sugar
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 cup 1 to 1 Gluten Free Flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp sea salt
  • 2 tbsp sprinkles - I used Wilton vegan friendly

Classic Vanilla Icing

  • 1 cup icing sugar - I used Wholesome brand
  • 2 tbsp non-dairy milk - I used vanilla soy milk
  • 1/2 tsp vanilla extract
  • pinch of salt

Instructions
 

Bean Cake Blondies

  • Preheat oven to 350°F and lightly grease a 9X9 baking dish.
  • Mix flax and water, set aside for 3 minutes.
  • In a food processor add melted butter, sugar, vanilla, beans, maple syrup and flax eggs. Blend until very smooth and no clumps remain.
  • In a mixing bowl combine flour, baking powder, salt and sprinkles.
  • Add bean mixture to dry ingredients and mix.
  • Bake for 25 minutes, or until toothpick comes out clean. Allow to cool in the dish for 10-15 minutes before removing and transferring to cooling rack. Top with icing and additional sprinkles (if desired) once fully cooled.
  • Slice into desired number of servings and store in airtight container in the fridge.

Classic Vanilla Icing

  • In a mixing bowl, whisk all ingredients together. Use immediately to avoid icing becoming stiff.

Notes

* If you are not avoiding wheat, regular flour works in this recipe. ** I have not yet made this recipe with traditional sugar, but thinking traditional white sugar would work fine.
