Funfetti Bean Cake Blondies - Vegan, Gluten-Free and Nut-Free

White bean blondies. Sweet, buttery, loaded with sprinkles and topped with classic vanilla icing. Everyone will be shocked they're made with white beans!

Ingredients
  

Bean Cake Blondies

  • 2 tbsp ground flax
  • 6 tbsp water
  • 1 1/2 cups cooked white beans - I used navy beans
  • 1/4 cup melted butter - I used Earth Balance
  • 3/4 cup coconut sugar
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 cup 1 to 1 Gluten Free Flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp sea salt
  • 2 tbsp sprinkles - I used Wilton vegan friendly

Classic Vanilla Icing

  • 1 cup icing sugar - I used Wholesome brand
  • 2 tbsp non-dairy milk - I used vanilla soy milk
  • 1/2 tsp vanilla extract
  • pinch of salt

Instructions
 

Bean Cake Blondies

  • Preheat oven to 350°F and lightly grease a 9X9 baking dish.
  • Mix flax and water, set aside for 3 minutes.
  • In a food processor add melted butter, sugar, vanilla, beans, maple syrup and flax eggs. Blend until very smooth and no clumps remain.
  • In a mixing bowl combine flour, baking powder, salt and sprinkles.
  • Add bean mixture to dry ingredients and mix.
  • Bake for 25 minutes, or until toothpick comes out clean. Allow to cool in the dish for 10-15 minutes before removing and transferring to cooling rack. Top with icing and additional sprinkles (if desired) once fully cooled.
  • Slice into desired number of servings and store in airtight container in the fridge.

Classic Vanilla Icing

  • In a mixing bowl, whisk all ingredients together. Use immediately to avoid icing becoming stiff.

Notes

* If you are not avoiding wheat, regular flour works in this recipe. ** I have not yet made this recipe with traditional sugar, but thinking traditional white sugar would work fine.
