Vegan Dinner Meal Plan – December Week 2
Hope everyone had just a wonderful weekend and feeling ready (and pumped!) for the holidays. Over here, we are pretty much good to go as far as gifts and family planning is concerned. I have to pick up a couple last minute teacher and younger cousin gifts, but outside of that it’s looking good!
Last week’s Vegan Dinner Meal Plan went perfectly and I stuck to the schedule without fail. There is just SUCH a sense of relief knowing that the dinners are already planned out and even most of the prep is handled, and all I have to do is follow the plan! Without a dinner schedule, I find I am always micro-stressed throughout the day, thinking about what we have in our kitchen and what I can create in 30-minutes or less. These dinner plans seriously help to eliminate those stresses… to leave room for all the other adult-life stresses, LOL!

December Week 3 – Recipes
Let’s have a look at what’s on the menu this week! All recipes are plant-based (vegan) and all mains are gluten-free. However some sides or add-on’s contain gluten. I usually opt out of these entirely, or have something similar that is gluten-free.
Monday – No-Beef & Broccoli served over a bed of vermicelli rice noodles.
Tuesday – Spaghetti with Veggies Balls paired with fresh greens tossed in a balsamic vinaigrette and garlic toast.
Wednesday – Sausage rolls with Scalloped Potatoes with a side of lightly steamed and buttered veggies.
Thursday – Jackfruit Tacos topped with lime crema slaw, sliced avocado and fresh cilantro.
Friday – Gnocchi Casserole features tender gnocchi and broccoli crowns, drenched in a creamy cheese sauce and finished with a crunchy breadcrumb topping.
Saturday – Fresh Rolls with Tahini Dressing are stuffed with bright, crunchy veggies and warm oven baked tofu.
Sunday – Moroccan Chickpea Soup served with warmed garlic naan bread.

So there you have it! That is how I am planning our families week of dinners out. As usual, this schedule most definitely might not work for everyone, but I find it is ideal for our family and my life.
