"Everything" Avocado on Sweet Potato Toasts - Vegan, Gluten-Free & Nut-Free

An unexpected combination makes for a rich and satisfying breakfast or even late-night snack!

Ingredients
  

Sweet Potatoes

  • 1 large sweet potato
  • 1/2 tsp olive oil
  • 3 medium avocados
  • 1 tbsp "Everything Bagel" Seasonings

"Everything Bagel" Seasonings

  • 2 tbsp sesame seeds
  • 2 tbsp poppy seeds
  • 1 tbsp garlic powder
  • 1 tbsp dried minced onion
  • 1 1/2 tsp sea salt
  • 1/4 tsp chili flakes - optional, if you like a bit of spice!

Instructions
 

Sweet Potatoes

  • Preheat oven 400°F and line a baking sheet with parchment.
  • Peel sweet potatoes and cut into 1/4 inch slices. Transfer to prepared baking sheet and drizzle with olive oil, flip and repeat on other side (I also sprinkled with a pinch of sea salt).
  • Bake for 10 minutes and then flip sweet potatoes and bake for another 5-7 minutes.
  • Remove from oven and allow to cool slightly.
  • In a bowl, mash avocados and mix in fresh lemon juice and seasoning.
  • Top sweet potato "toasts" with avocado mix and desired amount of "Everything Bagel" seasoning.

"Everything Bagel" Seasoning

  • Mix all ingredients together and store in an airtight container.
