"Everything" Avocado on Sweet Potato Toasts - Vegan, Gluten-Free & Nut-Free

Sweet Potatoes
- 1 large sweet potato
- 1/2 tsp olive oil
- 3 medium avocados
- 1 tbsp "Everything Bagel" Seasonings
"Everything Bagel" Seasonings
- 2 tbsp sesame seeds
- 2 tbsp poppy seeds
- 1 tbsp garlic powder
- 1 tbsp dried minced onion
- 1 1/2 tsp sea salt
- 1/4 tsp chili flakes - optional, if you like a bit of spice!
Sweet Potatoes
Preheat oven 400°F and line a baking sheet with parchment.
Peel sweet potatoes and cut into 1/4 inch slices. Transfer to prepared baking sheet and drizzle with olive oil, flip and repeat on other side (I also sprinkled with a pinch of sea salt).
Bake for 10 minutes and then flip sweet potatoes and bake for another 5-7 minutes.
Remove from oven and allow to cool slightly.
In a bowl, mash avocados and mix in fresh lemon juice and seasoning.
Top sweet potato "toasts" with avocado mix and desired amount of "Everything Bagel" seasoning.
