Avocados could be used as genuine currency in our home. Should we ever run out of avocados, it becomes a blame game and a who-done-it. Each sibling faulting the other for “always eating the last avocado.” Heaven forbid I should make one child easy avocado toast for breakfast or lunch and not the others. Don’t get me wrong, I too enjoy the creamy yumminess of a perfectly ripened avocado, but not anywhere near the way the kids do.

As you can now gather, having at a good number of ripe avocados ready and on hand is basically essential in our kitchen. I am always trying to create and come up with new avocado toast ideas, and throughout the years have probably created enough to produce a mini-cookbook! However, this recipe for Easy Avocado Toast is the one we always seem to fall back on and never ceases to be a family favourite.

Easy Avocado Toast – Ingredients

I think the best thing about avocado toast is the incredible amount of fresh ingredients you can include. Let’s have a peek at some the healthy and super good for you ingredients!

Avocado – Hass avocado is easy to find and prized for it’s high nutrient value. Avocados are rich in potassium, vitamin K, folate, vitamin C, vitamin B5 and B6. My personal favourite thing about avocado is they are loaded with hearth-healthy monounsaturated fatty acids. 77% of it’s calories are from fat, making it one of the fattiest whole plant foods.

Fresh Lemon Juice – Citrus and avocado just go together so perfectly! Most of us already know how well lime and avocado pair together because of guacamole, and I assure you lemon tastes just as great. Not only does the lemon taste amazing, the citric acid also helps to slow the browning of the avocado, which is is a consequence of its exposure to oxygen in the air, as well as the presence of phenolic compounds in the avocado. If you don’t have lemon on hand, lime can also work here.

Tomato – Again, another seemingly natural match made in food heaven. There is just something about the combination of avocado and tomato that works so well! As a family very choosy about tomatoes, I would suggested using vine-ripened tomatoes if possible for this recipe. Tomatoes allowed to ripen on the vine before they’re picked are certainly the juiciest and most flavorful. Most tomatoes sold in stores are picked before they’re ripe and ripened with ethylene gas or in warming rooms.

Cilantro – I just love little pop of freshness and flavour the cilantro gives this avocado toast! It tastes like eating summer and sunshine. However, I know that some readers may suffer from the dreaded “cilantro tastes like soap” syndrome (y’all are in my thought and prayers, LOL) and this fresh herb is just not a feasible option. Fear not! Fresh basil works so wonderfully in this recipe. Parsley is also a decent option is needed.

Green Onion – In this recipe no fresh onion or garlic is used, as I find it can be too over-powering. Green onion offers the perfect compromise for an otherwise over-abundance of sharp, bitter onion-like flavour that can occasionally overtake a recipe like Easy Avocado Toast. I use both the green and white parts and chop finely, so my picky eater doesn’t complain (insert eye-roll).

Hemp Hearts – If you are a regular on my blog or social media (dear goddess in heaven, bless your heart!), then you know our obsessed with hemp hearts and how our family uses them at any given opportunity. Not only do they have a delicious slightly nutty flavour, but the texture is is so dreamy and works like magic in this toast recipe. I could go on forever about the health wonders provided by hemp hearts, but instead I’ll link you up and you can read more (here) if so desired.

Other ingredients include: Himalayan salt, black pepper, garlic powder and your choice of bread. My family LOVES organic sourdough, so it’s on heavy rotation in our home!

How to Make Avocado Toast Recipe

It’s almost far-reaching to call this a recipe. Basically, you mash a few avocados in a bowl, add a couple other ingredients and smack it down on some toast. Literally… it’s that easy. Once you get that hang of it, you can make this recipe your own by customizing the fresh ingredients, spices and bread. But for now, let’s see how we get this thing done!

Step 1: In a mixing bowl, mash avocado with a fork and toss in fresh lemon juice, cilantro, green onion, salt and garlic. Stir to combine and briefly set aside.

Step 2: Toast bread to desired level. Divide the avocado mash into 4 and top each toast. Add sliced tomato, hemp hearts and black pepper to taste.

Step 3: Serve and eat immediately. This is not a recipe you can save for later or refrigerate. Fresh is 100% best for this one. Enjoy!!!

  • 3 medium ripe avocados
  • 1 tbsp fresh lemon juice
  • 1/4 tsp Himalayan salt
  • 1/8 tsp garlic powder
  • 1 tbsp cilantro - chopped
  • 1 tbsp green onion - chopped
  • 1 medium tomato - sliced
  • 1 1/2 tbsp hemp hearts
  • black pepper to taste
  • 4 slices organic sourdough bread - or gluten free option

Instructions
