Summer Vacay Smoothie – Vegan, Gluten-Free & Nut-Free

 

This was a creation of slight desperation. Last summer, the kids all began griping about the same-ole, same-ole smoothies (don’t even get me started on how #firstworldproblems this is). I knew I had to dream up something that was free from bananas, berries and mango. Around that time, I had been on an Asian food binge and had some ingredients floating around that I decided to experiment with. After a few different variations, the Summer Vacay was born and became a favorite for the remainder of the season. As the weather became oh-so Canadian again (sigh…), smoothies morphed into yogurt and oatmeal bowls. However, with spring being the little temptress she is and giving us a sneak peek at all the good things to come, I was reminded that smoothie time is just around the corner. Hooray!

Summer Vacay Smoothie - Vegan, Gluten-Free & Nut-Free

Sweet, creamy, refreshing and zingy tropical smoothie high in protein and flavour!

Ingredients
  

  • 1 cup frozen pineapple
  • 1 cup fresh spinach
  • 1 cup non-dairy milk - coconut milk works great here
  • 3 tbsp fresh lime juice
  • 1/4 cup fresh mint leaves
  • 1/4 cup vanilla protein powder
  • 1/2 inch piece ginger

Instructions
 

  • In a high speed blender, blend all ingredients together until very smooth. Serve immediately.

Notes

* If your picky eater is not used to fresh ginger, start with a smaller piece than suggested. My picky eater is officially a ginger lover now... but it was a good 2-3 years of working small amounts into dishes to get his palette used to the flavour punch!
** Have a next level picky eater who isn't cool with green drinks? When my guy was a savage about anything "healthy," I went out and bought coloured smoothie glasses with lids and steel reusable straws (the things we do, honestly!). That way he couldn't see the colour and was less likely to complain. #momwin
